If you look at other specs, you’ll also notice that the battery of the XS Max is larger (3174mAh vs 2658mAh) but since it has a larger screen (6.5” vs 5.8”), it also eats up more power, so don’t expect to get that much more battery life out of it.

But back to the topic of screen real estate, since the XS has a bigger screen, it’s also a larger device. Since I personally favor smaller phones that I can easily use with one hand, I think I would buy the regular XS. But perhaps you’re the kind of person that prefers a bigger phone.
